Just about all of Valve's games are very tame in the language department, and also in the violence (with the possible exception of Team Fortress 2, though it isn't that bad) and sexual departments. They're all designed for PC as well, and they're absolutely amazing. Grab them during the next Steam sale!

Vanquish is rated M, but despite the F-bombs and constant profanity it's an awesome game. It's on PS3, though. And if you're a PlayStation Plus subscriber, you get it for free.

I know the original Gears of War is on PC and it had a filter. And yes Black Ops 2 does have a filter . Half life games are pretty great and pretty light on content. If you're looking more for multiplayer only the Battlefield games are really great, especially Bad Company 2 and 3. Just turn off the voices because the language can get pretty bad.

I haven't played Black Ops 2's campaign, but at least in the first, I think the only thing the filter changed were the F words... Don't get me wrong, it was nice to be able to have some control, but there was still plenty of language if I remember correctly.
As far as PC shooters though, Planetside 2 is good. Chrome: Specforce is an ok fps as well... $1.24 atm on steam (M, but I don't recall language, and ESRB doesn't list it). The same goes for the first Ghost Recon game, but it has been a while.
