Is it just me, or are the standards of humanity slowly declining? People are accepting third or fourth best it seems, but perhaps I'm wrong... who knows? What're your thoughts!

What standards?
Moral standards - most definitively...my views are not "evolving"
Video game standards - perhaps while there are many great games out there..I wasn't blown away by the first couple of Halos
Movie standards - Hollywood is getting unoriginal

I meant specifically the standards of the quality in games in general. It feels as though people are becoming more lenient towards certain games, that should not deserve the high praise that they receive.

In games, it all depends on where you look. Sure, there are problems, but we have it better than ever before! I think the real problem is what people expect out of game reviewers/critics and games in general.
Know what my favorite recently played game has been? Brink. It's nowhere near as good as BF3 or Mirror's Edge, and it has TONS of problems, but I've learned to accept a game's flaws. It doesn't mean I ignore the problems, and I will definitely point them out in a review, but I play games to have fun, not to contemplate the state of the industry.

I actually think people have become too critical of games recently.
The amount of value put on the review scores has started making other people feel like their qualified to do the same.

Actually, I think that it's a problem of skewed retrospect. Every generation thinks its golden moments were better than the next generation's. It's the reason for every facebook post that says "LIKE IF YOU REMEMBER THESE AND YOU'RE AWESOME" with a picture of the original NES console. People don't remember the buttload terrible games that came out with it because, like the current generation, we learn to play the good and not to linger in the crap. The generations before me had Super Mario Bros. 3, and I've got Deus Ex, the Elder Scrolls games, and Ocarina of Time (which, if I'm being honest with myself, wasn't that hard of a game. It had its moments, but... overall, not pants-crapping hard). The generations past had E.T., and we've got Superman Returns.

Anyone remember Nintendo's seal of quality? They had some pretty tough standards, and now... we have shovel ware accross all nintendo systems.

The 3DS is pretty much free from shovelware.

Nintendo has been the more noticeable victim of shovelware because they've been more aggressively promoting their "family" image. And I'm sad to say that a lot of family games are just bad games. XD
Though all systems have shovelware, I think the reason Nintendo's is more prominent isn't necessarily because there's more of it, but because it seems a lot of people love to poke fun at the big N. I love me some Metroid and Zelda, but it's hard
not to make fun of Carnival Games.
