Very few people can...it's why they invented electric tuners.
To be honest ( though I am not an expert), ear training is something that is learned 90% of the time, and tuning by ear, even relative tuning, is really hard. And talent is overrated compared to learning. Hate to sound like a peppy boy scout, but it's true. XD

Depends on the steel.
On most of my knives I'll just use a pocket stone, but I'm starting to love convex edges. Just spent like 5 hours reprofiling my Benchmade 53 balisong in D2 to a convex using 1000 grit sandpaper and it's a friggin razor.

Heh. For the first time in my life, I can give a specific answer to that. XD It's mah byrd, so 8Cr13MoV, I think.
Not dull yet...but I'm anticipating it losing it's edge in the future, and would rather be prepared....plus, Soup guilted me about not honing my knives a lot yesterday.

Instead of a V it has rounded sides. Like() but less ASCII

A lot more material behind the edge.
I mostly use it on carbon steels. Makes a long lasting edge last even longer and it's fairly easy to maintain with cheap easily acquired gear...but it's time consuming to reprofile to if the knife didn't come with one. Your Byrd's steel is essentially Chinese AUS8, it's not bad...but I dunno if I'd bother, as it's relatively soft and easy to resharpen, iirc.
I'd use any cheap stone you could find. Heck, if you're desperate, you could use a piece of cardboard with toothpaste rubbed on it. Paste, not gel. That is, if it's not super dull.

Not desperate...yet. Starting to dull down on the front end though. Still sharper than my other knife...I think we've got a stone, and if I can find it, we may even have a sharpening kit.
