I watched that a couple days ago, and now I'm learning Wing Chun. Thoughts on this?

It wouldn't be my preference to learn, but that's awesome.

And Ip Man is awesome.

I'd give it a read...it's overrated as most stuff like it is...but I'd say it actually gives a fair view of what the south is. For better or for worse.
