Oh, that....
It's...usually hard to avoid people noticing something's missing. Not necessary, naturally, but preferred.
Off the top of my head, I see two options.
First, if the item, or items are illegal, it's a safe bet the police won't be involved at all. You could leave prints, DNA, whatever, it doesn't matter here.
Secondly, you could make a counterfeit. See: approximately 1/3 of all White Collar episodes.

See, I figure you could make a living off re-stealing stolen items and returning them to their rightful owners (or putting up on the black market.) and that'd be one of the most awesome jobs available. Startup is the only problem.
