How about this?
Persona 3: FES
It's rated M, and it's pretty dark, but it also has a ton of really cool stuff. There's an entire social sim in here, plus it's got elements of roguelikes (randomly generated dungeons). So good. And all the anime cutscenes your heart could desire.
Persona 4
Same deal as above, but a little less dark. Also, it's awesome.
Dragon Quest VIII: Journey of the Cursed King
So, the Dragon Quest series is pretty popular in Japan. Like, more popular than the Final Fantasy series. Like, kids have been robbed on the way home after buying this game. So it's good. In fact, this might be one of the best PS2 games to come out, since, I don't know, Final Fantasy X. It's just really good, and really classic.
Entire Disgaea series
Let's ignore the (very Japanese and very dark) story. It's about some dudes in a parallel universe called the Netherworld, where moral values are reversed from those of humans. Or something. ... Point is, it's an awesome tactical RPG on the PS2, a system which has a ton of bad RPGs, some middling ones, and pretty much no tactical RPGs. Which makes this unique.
Valkyrie Profile 2: Silmeria
You're a valkyrie in this game. That's cool enough. But, beyond that, you're looking at a sidescrolling RPG with a crazy cool combat system.
Blue Dragon
A sprawling three-disc game on the Xbox 360, made by Mistwalker, which was founded by some of the key guys behind the most successful of the Final Fantasy games? And what's that? It has old-school difficulty and amazing boss fight music? With art by Akira Toriyama, the guy behind the Dragonball Z manga, this game just keeps getting better and better.
Lost Odyssey
Another game from Mistwalker, this one was written by Hironobu Sakaguchi (the guy who wrote Final Fantasy 6 and 7, and directed/designed the games in the series prior to that), but it's anything but old-school. In fact, it has a pretty new battle system, and the writing is so good, the game designers out and said that they wanted players to cry with this game. Well, that's not easy task... but somehow, amidst grating side-characters, they managed it. There's some of the most moving writing in a game in years here, and it's truly astounding what they managed.
Let me be honest: there are a many more games that I would recommend after this. Many more. From the philosophical leanings of the Xenosaga games, to Final Fantasy Tactics; from Tactics Ogre to nearly any game in the Tales series; from Skies of Arcadia to the Star Ocean series. There are so many worthy titles... Final Fantasy is just the easiest fallback, and the most mainstream.
